spiced gherkins in eggs

Ingredients: (4 persons)

  • 8 eggs
  • 10 small gherkins
  • 2 spoons ingwer
  • 1 spoon capers
  • 1 spoon olive oil
  • black pepper
  • salt
  • 2 spoons coriander
  • 3 spoons mustard

Instructions:

  1. cook the eggs 8 to 10 minutes
  2. peel them and cut them in two pieces
  3. remove the egg yolk and mix it with the filling
  4. the filling: cut gherkins, ingwer and capers in small pieces
  5. mix it with the egg yolk, mustard and olive oil
  6. spice it with salt (not too much), black pepper and small cutted coriander
  7. fill the eggs with the filling
